14세기 이탈리아의 요리책을 통해 본 맛에 대한 역사적 해석
본 연구의 목적은 14세기 이탈리아에서 작성된 요리책들을 역사적 관점에서 살펴보고자 하는 데 있다. 즉 요리와 관련되어 어떠한 문헌자료들이 존재하고 있으며, 이러한 문헌들에 수록된 요리의 특징은 무엇인지 알아보고, 궁극적으로는 그것을 어떻게 역사적으로 이해할 수 있을지에 대해 맛 그 자체에 대한 관심이 요리책에 표명되고 있음을 읽어낼 수 있는 시대라고 추론해 보고자 한다. 이 시대의 요리책을 다룬 연구는 주로 필사본의 작성 연대나 작성 장소, 그리고 이 필사본들 사이의 선후관계를 밝히는 데 관심을 두었다. 이러한 연구 덕분에 이들은 14세기 이탈리아의 요리를 연구하기 위한 자료로서의 의미를 갖게 되었다. 14세기의 요리책을 통해 다채로운 당시의 식생활을 확인할 수 있으며, 여기에 더해 맛에 대한 관심이 등장하고 있음을 추론할 수 있다. 요리책에서 당시 영양이론과 관련된 식재료의 위계를 요리로 극복하고자 하는 시도들이 발견되는 것은 이제 내가 원하는 것을 먹는 것에 관심을 갖는 문화의 싹이 서서히 돋아나고 있다고 해석할 수 있는 부분이다. 14세기의 요리책은 이렇게 맛 그 자체에 대한 역사적 관심의 등장을 읽어냄으로서 당시의 사람들을 문화적 주체로 바라보려는 역사적 시도를 뒷받침하는 좋은 예이다.
Historical Interpretation of the Taste through the Italian cookbooks in the 14th century
The purpose of this study is to examine the Italian cookbooks in the 14th century. This study traces the discovery of the manuscripts of the Italian cuisine; secondly, it analyzes the contents of the cuisine in this period; finally, it attempts to show the precursor of the cultural interests for the sense of taste. The previous research, which focused on those manuscripts, has mostly investigated the date and the place of their creation, as well as the sequential relationship between them. Thanks to that research, these manuscripts could be fundamental resources to study the history of Italian cuisine in the 14th century. The manuscripts provide insight into the cooking lives of the people at that time. In addition, through the manuscripts, it is suggested that the interest for the sense of taste was conceived. Of course, this taste is derived from the interest in health. But, at the same time, we can find from the manuscripts that there are efforts to overcome 'the Hierarchy of the Food', which is related with the nutritional theory in that period, by cooking; it shows that the conception of the new cultural trend of a person eating what he or she wants. This research, which focuses on the appearance of the interest for the taste, is an historical attempt that looks at the people in that period as a cultural subject. Of course, the Italian cookbooks in the 14th century are satisfactory resources for this.
